Malvasia di Castelnuovo Don Bosco DOC is a typically red wine, sweet and particularly aromatic. Produced with Malvasia di Schierano and Malvasia nera lunga grapes, aromatic red grape varieties.

Grape variety:  Malvasia di Schierano and Malvasia Nera Lunga
Production area:  Castelnuovo Don Bosco and some neighbouring municipalities located in the Alto Astigiano area.
Vinification:  Cold maceration for at least 3 days and subsequent secondary fermentation in an autoclave at low temperature.
Maturation: minimum 1 month on the yeasts.
Color:  Light ruby ​​red, cherry.
Aroma:  Floral, fruity, intense but above all aromatic, typical of the original grape which, thanks to careful vinification, allows the aromas that evoke dog rose and wild strawberry to be maintained unaltered.
Taste:  Sweet, lively, delicate, persistent and not cloying, thanks to a long almond finish.
Perlage:  Fine and persistent.
Best time to consume:  1-2 years.
Pairings:  With sweets and desserts in general, with dry pastries such as the typical Piedmontese meliga (corn) biscuits or even to soak a strawberry salad. Excellent as a base for cocktails.
Serving instructions:  Freshly uncorked in goblets at a temperature of 6-8°C.
