Taste: In the mouth the wine presents itself with an elegant vivacity, thanks to a long refermentation in autoclave (Charmat method). It is dry, with a good body and a tannin that makes it unique, leaving a pleasant bitter sensation at the bottom of the palate.
Best time to consume: 1-3 years.
Pairings: The tannin and liveliness that are perceived in the mouth make it pleasantly suitable to accompany dishes rich in seasoning or in any case fatty such as first courses with meat sauces, lamb and some Piedmontese dishes such as cold cuts appetizers and Piedmontese mixed fried food.
