Production: Destemming and gentle pressing. Maceration for approximately 12 hours, followed by draining and fermentation of the free-run juice in temperature-controlled stainless steel tanks. Maturation in cement vats lined with food-grade epoxy resins.

Density: 5,700 plants per ha.
Production process: Manual harvesting and further selection of the grapes on a sorting table. Stems removal and soft pressing. Maceration for 12 hours, draining and fermentation of the "run juice" in stainless steel tanks at controlled temperature. Maturation in cement tanks.
