Production process: The grapes, harvested by hand, are cooled in cold storage rooms and selected on a sorting table. Stems removal and soft pressing. Fermentation in stainless steel tanks at controlled temperature and refinement in cement tanks.

Mendola is a dialectal term meaning “almond.” Indeed, it was usual to find trees among the rows of the vineyards, like the almond tree, so that the farmers could rest under the shade of their fronds.
